World's Best Flourless Pancakes
I think that one of the hardest parts of adopting a healthier way of eating is cutting out favorite foods that have very little nutritional value. Take pancakes, for example. A staple of the standard American breakfast, they are high in simple carbohydrates and empty calories. Also, the traditional pancake recipe that calls for lots of flour and milk just doesn't work for people who don't eat gluten or dairy.
So, I'm happy to say that I have a great recipe that is flourless, sugarless and high in protein and it tastes fantastic! These pancakes are so good that even people with no dietary restrictions should try them - most likely, you'll never go back to the old, doughy ones. And, as a special bonus, they contain only a handful of easily obtained ingredients.
I've included the brand names of a couple of ingredients because these are the ones I've found that I like the best. I get no kickbacks or benefits of any kind from these suggestions, they are here simply to help you find items you may not already be familiar with. For the spices, check out your local ethnic foods market. I find that the variety, freshness and prices are much better in ethnic markets than in traditional supermarkets.
World's Best Flourless Pancakes
Makes 4-6 regular-sized pancakes
1 large banana
2 organic eggs
2 Tablespoons Manitoba Harvest Hemp Hearts Raw Shelled Hemp Seeds
2 Tablespoons Navitas Naturals Raw Cacao Nibs
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
Raw organic coconut oil
Beat the eggs until fluffy. Mash the banana well with a fork and add to the eggs. Mix in the rest of the ingredients, except the coconut oil. Heat a skillet over low heat and add enough coconut oil to provide a light coating. Spoon the pancake mixture onto the skillet and let cook until the edges get slightly dry. Flip carefully with a spatula and allow to cook on the other side.
Serve with fresh berries or a bit of organic agave nectar. Enjoy any time of day!
